Shrek Buckwheat Pancakes
These ogary-green pancakes are quick to whip up any time of the day and are a great way to get the kids to eat more greens! PLUS! They’re completely dairy and gluten free.
1/2 Cup Buckwheat Flour
2 Big handfuls spinach
1/2 cup Frozen Blueberries (defrosted)
Your fav nut butter! ( I used Brazil nut, almond & cashew!)
1. Throw all pancake ingredients into blender and mix on high until all blended.
2. Pour mixture into small ‘pikelets’ in fry pan over a medium heat.
3. Serve with your favourite berries and nut butter! Yum!
